An Asian version of “apricot chicken” with flavours of Kaffir and lime adding balance to the sweetness of apricots.
Ingredients
a:6:{i:0;s:21:”16 kaffir lime leaves”;i:1;s:47:”750g chicken thigh fillets (cut into 3cm cubes)”;i:2;s:39:”8 apricots (halved with stones removed)”;i:3;s:15:”3 spring onions”;i:4;s:27:”2 limes (cut into quarters)”;i:5;s:32:”2 tablespoons sweet chilli sauce”;}
Instructions
- Soak 8 bamboo skewers in cold water for 15 minutes.
- Thread kaffir lime leaves, chicken, spring onions, apricots and lime wedges onto skewers.
- Cook skewers on a lightly oiled barbeque grill until tender, brush with sweet chilli sauce in the last 5 minutes of cooking
